Vegetable & Soybean Stew

Thursday, June 16, 2011

1 cup tofu firm
2 cups fresh tomatoes
1 green pepper, chop
shake of Bragg Sprinkle
3 cups cooked soybeans
2 red onions, chop
1 tsp Liquid Aminos
4 raw potatoes, chop

Cut tofu into small pieces and cook in a skillet until slightly browned; remove from pan. Chop potatoes, onions and green peppers put into skillet. Season with aminos and sprinkle. Add soybeans and tomatoes. Cover. Cook about 30 minutes, or until done, adding liquid from soybeans or water, as needed. Add tofu. Serves 5

We rate this 5 out of 5. It is very good. Also for those out there that cant do soybeans or just can find them you can try using chick peas instead. Chick peas and soybeans have smiler taste.
On a side note I have switched from using the Bragg Sprinkle to using Mrs.Dash Tomato Basil with Garlic. I compered the ingredients and they are very close to the same thing. Mrs.Dash is much cheaper. I use the Mrs.Dash Fiesta Lima when I want to add a little kick.

Soybean Loaf & Brown Sauce

Wednesday, June 15, 2011

Soybean Loaf:
3 cups cooked soybeans
3 eggs
3 tbsps olive oil
1 cup whole-grain cracker crumbs
1/2 cup celery, mince
1 cup soy milk
1/2 tsp poultry seasoning
1/2 cup red onion, mince
1 tsp liquid aminos
shake of Bragg Sprinkle

Mash soybeans. Thoroughly mix all ingredients together. Place in a oiled bread pan. Bake 30 minutes at 350. Serve hot or cold. Serves 5

Brown Sauce:
2 tbsps olive oil
1 cup heated liquid such as water or vegetable stock
2 tbsps whole grain flour
pepper to taste
1/3 tsp Bragg Sprinkle

Cook flour in oil for several minutes, until well browned. Meanwhile, boil water or vegetable stock. Pour boiling liquid into cooked flour; remove from heat. Stir mixture briskly with a whisk or fork. Use a spoon to scrape out the corners of the pan so that all the flour-oil mixture is incorporated into the water. Then put it back on the heat and let the sauce simmer for several minutes. Season lightly with pepper and Sprinkle
We rate this a 4 out of 5. We had to let this cook about 20 more minutes then what the recipe called for. Even after that the loaf still fell apart when I took it out of the pan. The next time I make this I will add 1/2 of rolled oats to help firm it up. It has a great flavor.

Vegetarian Sausages

Tuesday, June 14, 2011

1 cup cooked lima beans
2 cups cooked soybeans
1 cup cooked navy beans
1 tsp liquid aminos
1 egg
1/2 tsp Bragg Sprinkle
2/3 cup soy milk
1/8 tsp paprika
1/2 tsp poultry seasoning
1 cup cornmeal or whole-grain cracker crumbs
1 tbsp olive oil

Put all beans in food processor. Mix in seasonings. Shape seasoned beans into sausages. Beat egg and soy milk. Now dip sausages in mixture, then cornmeal, and repeat. Place in pan with olive oil, and brown on all sides at 450. Serves 8
We rate this a 4 out of 5. The boys loved them. They look like a large fish stick. Everyone agreed that they need some kind of dip. We tried it with ketchup, tarter sauce, and bbq sauce. Nobody liked it with bbq sauce. The boys loved the ketchup and Yed  loved it with tarter sauce. Jason and Zem both want to try it with hummus. So the next time I make them I will have to make some hummus to try that out.

Bean Patties

Thursday, May 26, 2011

1 cup whole grain bread crumbs
2 cups cooked beans, mash
1 tsp liquid aminos
1 egg or egg replacer equal to 1 egg
shake of bragg sprinkle
1 Tbsp parsley, chop

Mix all ingredients, form patties. Bake at 350 for 10 minutes. Any beans/legumes can be used in this recipe. Serves 4

We rate this a 4 out of 5. We used black beans for this recipe. I have also been been using Mrs. Dash Tomato and Basil with Garlic instead of the Bragg Sprinkle because it is much cheaper and it has just about every spice that the Bragg Sprinkle has in it. You can also find Mrs. Dash in your normal Grocery store. I add about 1 Tbsp of sea salt. The next time I will be adding a little Cayenne pepper to this for a little kick. We served this in a pita with lettuce, tomato, red onion, mayo and chesse.

Sprinkle with cheese and Bragg Sprinkle and bake 350 for 10 minutes or until set. Serves 4-6

We rate this a *3 out of 5. There are some changes that I would do to this recipe to make it better. First off I would not use so many onions and peppers it is just way to much. I would also like to add spinach to the veggies and some brown rice. This is just a fancy way to make an omelet but with all the eggs we get it is a great way to change it up.
